4th of July Poolside Celebration!

This year, I celebrated the 4th of July with a delightful poolside get-together with my family. The sun was shining, the pool was inviting, and the food was absolutely scrumptious. I spent the past two weeks testing out some new recipes to make sure everything was perfect for the big day. Here's a look at the delicious and nutritious dishes we enjoyed:



Appetizer: Steak Salad

To kick off the festivities, I served a refreshing steak salad. Juicy slices of perfectly cooked steak atop a bed of mixed greens, with cherry tomatoes, red onions, and a zesty vinaigrette. This salad is not only light and fresh but also packed with protein and vitamins, making it a perfect start to our meal without feeling heavy.

Main Course:

Zesty Shrimp n Rice

For the main course, I prepared my Zesty Shrimp n Rice. This dish features plump shrimp seasoned with chili, lemon, and oregano, served over a bed of fluffy rice. The citrusy and slightly spicy flavor of the shrimp paired wonderfully with the simple, yet flavorful rice. It's a healthy and satisfying dish that’s full of protein and low in unhealthy fats.

Side: Mexican Street Corn

No summer gathering is complete without some Mexican Street Corn. I grilled the corn to perfection and seasoned it with a blend of chili powder, cayenne, and paprika, then topped it with a sprinkle of cotija cheese and a squeeze of lime. This healthier take on a classic favorite brings a smoky and spicy element to the table without the guilt.

Dessert: Fresh Fruit Pie

To end our meal on a sweet note, I made a Fresh Fruit Pie. A buttery crust filled with a medley of fresh, seasonal fruits and a light glaze. The pie was not only beautiful to look at but also a refreshing and satisfying conclusion to our feast, offering natural sweetness and plenty of vitamins.

A Day to Remember

In the past, I've often felt lethargic and stuffed after a 4th of July get-together. However, with these nutritious recipes, we were able to enjoy all the flavors of a typical party without the heaviness. These dishes allowed us to have better control over what we ate, enjoying the taste of traditional party food in a healthier way.
