Mexican Street Corn

Elote - Mexican Street Corn

Ingredients:

4 corn on the cob

Earth Balance vegan butter

Follow Your Heart grated vegan parmesan cheese

Elote seasoning mix:

1 1/2 tsp chili powder

1/2 tsp cayenne

1 1/2 tsp paprika

Instructions:

  • Soak corn in a microwave safe plastic container for 15 minutes.

  • Empty water and microwave corn for 3 minutes.

  • Turn on broiler.

  • Remove husk and stringy parts. Lay corn on baking sheet, then brush with butter.

  • Broil corn for 8 minutes, turn halfway for even char.

  • On all sides, brush with mayo, sprinkle parmesan, sprinkle seasoning.

  • Serve fresh!
